Preparation

  1. 1

    Prepare the Ingredients

Begin by peeling, seeding, and cubing the pumpkin into bite-sized pieces. Chop the onion and red bell pepper, mince the garlic, and grate the ginger. Rinse the fresh spinach leaves and set aside.

Cooking

  1. 2

    Sauté the Base

In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté for about 5 minutes until the onion becomes translucent.

  2. 3

    Add the Spices

Stir in the curry powder, cumin seeds, turmeric powder, salt, and black pepper. Cook for an additional 2 minutes until fragrant.

  3. 4

    Combine Pumpkin and Liquids

Add the cubed pumpkin and chopped red bell pepper to the pot. Pour in the coconut milk and vegetable broth. Stir well to combine all ingredients.

  4. 5

    Simmer

Bring the mixture to a simmer, cover the pot, and cook for 20-25 minutes, or until the pumpkin is tender. Stir occasionally to prevent sticking.

  5. 6

    Add Spinach

Once the pumpkin is tender, add the fresh spinach leaves to the pot. Stir and cook for an additional 5 minutes until the spinach wilts.

Serving

  1. 7

    Garnish and Serve

Remove the pot from heat. Serve the pumpkin curry in bowls, garnished with chopped cilantro and lime wedges for squeezing over the top.
