Begin by peeling, seeding, and cubing the pumpkin into bite-sized pieces. Chop the onion and red bell pepper, mince the garlic, and grate the ginger. Rinse the fresh spinach leaves and set aside.

In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté for about 5 minutes until the onion becomes translucent.

Stir in the curry powder, cumin seeds, turmeric powder, salt, and black pepper. Cook for an additional 2 minutes until fragrant.

Add the cubed pumpkin and chopped red bell pepper to the pot. Pour in the coconut milk and vegetable broth. Stir well to combine all ingredients.
