    Soak the Noodles

    In a large bowl, soak the glass noodles in 500 ml of warm water for about 15-20 minutes or until they are soft. Drain and set aside.

    Prepare the Vegetables

    While the noodles are soaking, prepare the vegetables: julienne the carrot, slice the bell pepper and onion, chop the green onions, mince the garlic, and slice the mushrooms.

    Cook the Chicken

    In a large frying pan or wok, heat a tablespoon of oil over medium-high heat. Add the sliced chicken breast and stir-fry for about 5-7 minutes until fully cooked. Remove the chicken from the pan and set aside.

    Stir-Fry the Vegetables

    In the same pan, add a bit more oil if necessary, and add minced garlic, sliced onions, and carrots. Stir-fry for 2-3 minutes until they start to soften. Then add the bell pepper, mushrooms, and green onions, and continue to stir-fry for another 3-4 minutes.

    Add the Noodles and Sauce

    Add the soaked glass noodles to the pan with the vegetables. Pour in the soy sauce, oyster sauce, sesame oil, sugar, and white pepper. Toss everything together, ensuring the noodles are well coated in the sauce and heated through.

    Scramble the Eggs

    Push the noodle mixture to one side of the pan. Crack the eggs into the empty side of the pan and scramble them until just set. Then mix them into the noodle and vegetable mixture.

    Add the cooked chicken back into the pan and toss everything together for a couple more minutes until heated through. Remove from heat.
