Preparation

    Soak Rice Noodles

    Place the rice noodles in a large bowl and cover them with hot water. Let them soak for about 20-30 minutes until they are softened. Drain and set aside.

    Prepare Sauce

    In a small bowl, mix together the fish sauce, tamarind paste, brown sugar, soy sauce, and chili powder. Set aside.

Cooking

    Cook Chicken

    In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the sliced chicken breast and cook until browned and fully cooked, about 5-7 minutes. Remove from skillet and set aside.

    Stir-Fry Vegetables

    In the same skillet, add another tablespoon of oil. Add the julienned carrot, sliced red bell pepper, and green onions. Stir-fry for 3-4 minutes until the vegetables are tender.

    Add Noodles and Sauce

    Add the drained rice noodles to the skillet with the vegetables. Pour the sauce mixture over the noodles and toss everything together to combine, cooking for another 2-3 minutes.

    Add Eggs

    Push the noodle mixture to one side of the skillet. Crack the eggs into the empty side and scramble them until fully cooked. Then, mix them into the noodles.

    Finish with Chicken and Bean Sprouts

    Finally, add the cooked chicken and bean sprouts to the skillet. Toss everything together and cook for an additional minute until heated through.

Serving

    Plate and Garnish

    Serve the Pad Thai hot, garnished with crushed peanuts, fresh cilantro, and lime wedges on the side.
