    Soak the Noodles

    In a large bowl, soak the wide rice noodles in hot water for about 20 minutes, or until they are softened. Drain and set aside.

    Prepare the Sauce

    In a small bowl, mix together soy sauce, oyster sauce, dark soy sauce, fish sauce, sugar, and chili paste until well combined. Set aside.

Cooking

    Cook the Chicken

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced chicken breast and stir-fry for about 5-7 minutes, or until cooked through. Remove from the pan and set aside.

    In the same skillet, add a little more oil if necessary and crack in the eggs. Scramble them until fully cooked, then remove from the pan and set aside with the chicken.
