Dough Preparation

    Mix the Flours

    In a large mixing bowl, combine the rice flour and tapioca flour. Mix well until the flours are fully incorporated.

    Add Water and Salt

    Gradually add the water and salt to the flour mixture. Stir until a smooth dough forms. If the dough is too sticky, add a little more rice flour.

Filling (Optional)

    Prepare the Filling

    In a skillet over medium heat, cook minced pork until browned. Add minced garlic and chopped green onions, stirring well. Season with soy sauce and pepper. Cook for an additional 2-3 minutes, then remove from heat.

Cooking the Kanom Jim

    Shape the Dough

    Take a small portion of the dough (about the size of a golf ball) and flatten it in your palm. If using filling, place a teaspoon of the pork mixture in the center and fold the dough over to seal it.

    Steam or Fry

    For steaming, place the shaped dough on a steamer basket lined with parchment paper and steam for about 15-20 minutes until cooked through. For frying, heat oil in a pan and fry the shaped dough until golden brown on both sides.

Sauce Preparation

    Make the Coconut Sauce

    In a small saucepan, combine coconut milk, sugar, and salt. Heat over medium-low heat, stirring until the sugar dissolves. Do not boil.

Serving

    Plate and Serve

    Serve the steamed or fried Kanom Jim hot with a drizzle of the coconut sauce over the top. Enjoy!
