Cooking the Curry

Prepare the Ingredients
Dice the chicken breast into bite-sized pieces. Slice the bell peppers and zucchini into thin strips. Set aside.

Cook the Chicken
In a large pan or wok, heat a tablespoon of oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.

Add the Curry Paste
Stir in the green curry paste and cook for another 2 minutes, allowing the flavors to meld.

Add Coconut Milk
Pour in the coconut milk, stirring to combine. Bring the mixture to a gentle simmer.

Add Vegetables
Add the sliced bell peppers and zucchini to the pan. Cook for an additional 5-10 minutes until the vegetables are tender.

Season the Curry
Stir in fish sauce, brown sugar, and lime juice. Adjust seasoning as needed.

Add Fresh Basil
Fold in the fresh basil leaves just before serving.
Preparing the Rice

Cook the Jasmine Rice
In a separate pot, bring 4 cups of water to a boil. Add 2 cups of jasmine rice, reduce heat to low, cover, and simmer for 15 minutes until rice is cooked and water is absorbed.

Plate the Dish
Serve the green curry over a bed of jasmine rice. Garnish with lime wedges and chili flakes to taste.
