Method

Dough Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Add the butter and mix until the mixture resembles coarse crumbs.

  2. 2

    Add Water

Gradually add water, mixing until the dough comes together. Knead the dough on a lightly floured surface for about 5 minutes until smooth.

  3. 3

    Rest the Dough

Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

Filling Preparation

  1. 4

    Cook the Potatoes

Boil the potatoes in a pot of water until tender, about 15 minutes. Drain and let cool, then peel and mash.

  2. 5

    Sauté the Onions

In a skillet, heat the oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.

  3. 6

    Mix Filling Ingredients

Add the mashed potatoes, green peas, curry powder, garam masala, and salt to the skillet. Stir to combine and cook for another 5 minutes. Remove from heat and stir in chopped cilantro.

Assembly and Frying

  1. 7

    Roll the Dough

Divide the dough into small balls. Roll each ball into a thin circle on a floured surface.

  2. 8

    Fill the Puffs

Place a spoonful of the filling in the center of each dough circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.

  3. 9

    Heat Oil for Frying

In a deep frying pan, heat oil for frying over medium-high heat until hot.

  4. 10

    Fry the Curry Puffs

Fry the prepared curry puffs in batches until golden brown, about 3-4 minutes per side. Remove and place on paper towels to drain excess oil.
