Prepare the Spinach

Blanch the spinach in boiling water for 2-3 minutes, then transfer it to an ice bath to retain its color. Drain and blend into a smooth paste.

Cook the Base

In a pan, heat oil or ghee over medium heat. Add the chopped onions and sauté until golden brown. Add minced garlic, grated ginger, and slit green chilies, and cook for another minute.

Add Tomatoes

Stir in the pureed tomato, salt, and fenugreek leaves. Cook until the oil separates from the mixture.

Combine Spinach

Add the spinach paste to the pan, mix well, and let it cook for 5 minutes on low heat.

Add Paneer and Cream

Cube the paneer and gently fold it into the spinach mixture. Pour in the cream and add garam masala. Cook for another 2-3 minutes.

Serve

Taste and adjust seasoning if necessary. Serve hot with naan or rice.
