Syrup Preparation

Create the elderflower syrup

In a saucepan, combine the elderflowers and water. Bring to a gentle boil over medium heat.

Add sugar

Once boiling, add the granulated sugar and stir until completely dissolved.

Add lemon and citric acid

Remove the saucepan from heat and add the lemon juice and citric acid. Stir well to combine.

Infuse

Cover the saucepan and let the mixture steep for about 30 minutes to extract the floral flavor.

Strain the syrup

After steeping, strain the mixture through a fine mesh sieve or cheesecloth into a clean jar to remove the elderflowers.
