Preparation Steps

  1. 1

    Prepare the Vermicelli

Cook the rice vermicelli noodles according to package instructions. Drain and rinse with cold water, then set aside.

  2. 2

    Prepare the Shrimp

If using raw shrimp, boil or steam until pink and cooked through. Let them cool, then slice in half lengthwise.

  3. 3

    Prepare the Vegetables and Herbs

Julienne the carrot and cucumber. Rinse and dry the mint, cilantro, and basil leaves.

  4. 4

    Soak the Rice Paper

Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10 seconds until softened, then lay it flat on a clean surface.

  5. 5

    Assemble the Rolls

On the bottom third of the rice paper, lay a few shrimp halves, a small handful of vermicelli noodles, a few pieces of lettuce, some carrot and cucumber, and a few herb leaves.

  6. 6

    Roll the Summer Roll

Fold the sides of the rice paper over the filling, then roll it tightly from the bottom up to enclose the filling completely.

  7. 7

    Repeat

Repeat the soaking, assembling, and rolling process with the remaining ingredients.

  8. 8

    Serve

Serve the summer rolls with a dipping sauce, such as hoisin-peanut sauce or nuoc cham.
