Prepare the Shrimp

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the jumbo shrimp with salt and black pepper. Add the shrimp to the skillet and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Make the Sauce

In the same skillet, add the butter and minced garlic. Sauté for 1 minute until fragrant. Add the diced tomatoes, charred jalapeño, and white wine. Bring to a simmer and let cook for 5 minutes. Stir in the lemon juice and grated Parmesan cheese until melted and creamy.

Combine and Serve

Return the cooked shrimp to the skillet and toss to coat in the sauce. Stir in the arugula and heat until just wilted. Serve immediately on a plate, garnished with additional Parmesan if desired.

Prepare Garlic Toast

While the shrimp is cooking, preheat the oven to 400°F (200°C). Brush the crusty bread slices with olive oil and sprinkle with garlic. Bake in the oven for about 5-7 minutes until golden brown. Serve alongside the shrimp galletti.
