    Bake the Potatoes

    Preheat the oven to 400°F (200°C). Wash the Russet potatoes thoroughly and prick them a few times with a fork. Place them directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

    Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving a thin layer of potato in the skins.

    To the bowl with the potato insides, add butter, sour cream, half of the cheddar cheese, green onions, salt, and black pepper. Mix until smooth and well combined.

    Refill the Skins

    Spoon the mixture back into the potato skins. Sprinkle the remaining cheddar cheese on top and add bacon bits if desired.
