In a small bowl, mix rice vinegar, sugar, and salt. Gently fold the mixture into the cooked sushi rice. Allow the rice to cool to room temperature.

Spread the cooled rice into a square or rectangular shape (about 1-inch thick) on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes until firm.
