Prepping the Roast
Preheat the oven to 450°F (230°C). In a small bowl, mix together the kosher salt, black pepper, garlic powder, and chopped fresh rosemary. Rub the olive oil all over the prime rib roast, then generously coat with the seasoning mix.

Roasting
Place the seasoned prime rib roast on a roasting rack in a roasting pan. Roast in the preheated oven for about 20 minutes to develop a crust.

Lowering the Temperature
After 20 minutes, reduce the oven temperature to 325°F (165°C). Continue to roast for about 15-20 minutes per pound, or until the internal temperature reaches your desired doneness (125°F for rare, 135°F for medium-rare, 145°F for medium).

Resting
Once the roast reaches the desired temperature, remove it from the oven and cover loosely with foil. Let it rest for at least 20 minutes before carving.

Making the Gravy (Optional)
While the roast rests, pour the drippings from the roasting pan into a saucepan. Add beef broth and bring to a simmer over medium heat. Scrape up any browned bits and let it reduce slightly to create a flavorful gravy.
