Boil the lobsters in salted water for about 8-10 minutes until they turn bright red. Remove from water, cool, and extract the meat from the claws and tails.

In a large pot, melt the butter over medium heat. Add chopped onion, diced carrot, and celery, and sauté for about 5-7 minutes until softened. Add minced garlic and cook for an additional minute.

Add Tomato Paste and Stock
Stir in the tomato paste, then add the fish stock, thyme, bay leaf, and bring to a boil. Reduce the heat and let it simmer for 20 minutes.
