Method

Preparation

  1. 1

    Prepare the Potatoes

Wash and peel the Russet potatoes. Cut them into long strips, about 1/4 inch thick.

  2. 2

    Soak the Potatoes

Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

  3. 3

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  4. 4

    Fry the Potatoes

Carefully add the soaked and drained potato strips to the hot oil in batches. Fry until golden brown and crispy, about 4-5 minutes.

  5. 5

    Drain and Season

Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with salt and toss with truffle oil, parsley, and grated Parmesan cheese.

  6. 6

    Serve

Finish with a sprinkle of black pepper to taste. Serve immediately, garnished with additional parsley if desired.
