Method

Preparation

  1. 1

    Prepare the Potatoes

Wash and peel the Russet potatoes. Cut them into thin strips or wedges, about 1/4 inch thick.

  2. 2

    Soak the Potatoes

Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

  3. 3

    Dry the Potatoes

Drain the soaked potatoes and pat them dry with paper towels to remove moisture.

  4. 4

    Heat the Oil

In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).

  5. 5

    Fry the Potatoes

Carefully add the dried potato strips to the hot oil in batches. Fry until they are golden brown and crispy, about 5-7 minutes.

  6. 6

    Drain and Season

Remove the fries from the oil and drain on paper towels. Immediately sprinkle with salt.

  7. 7

    Add Truffle Oil

Drizzle the hot fries with black truffle oil and toss to coat evenly.

  8. 8

    Garnish and Serve

Shave fresh truffles over the fries and garnish with chopped fresh parsley. Serve immediately.
