Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips or wedges, about 1/4 inch thick.

Dry the Potatoes
Drain the soaked potatoes and pat them dry with paper towels to remove moisture.

Heat the Oil
In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches. Fry until they are golden brown and crispy, about 5-7 minutes.

Remove the fries from the oil and drain on paper towels. Immediately sprinkle with salt.
