Preparation Steps

    Infuse Cream

    In a saucepan, heat the heavy cream over medium heat until it starts to steam. Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the pod to the cream. Remove from heat and let it steep for 15 minutes.

    Prepare Egg Mixture

    In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

    Combine Mixtures

    Remove the vanilla pod from the cream. Gradually add the warm cream to the egg mixture, whisking continuously to prevent curdling. Strain the mixture through a fine-mesh sieve into a measuring jug.

    Bake

    Preheat the oven to 325°F (160°C). Arrange ramekins in a baking dish and fill them with the custard mixture. Carefully add hot water to the baking dish until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes or until the custard is set but still slightly jiggly in the center.

    Chill

    Remove the ramekins from the water bath and let them cool to room temperature. Cover and refrigerate for at least 2 hours or overnight.

    Caramelize Sugar

    Before serving, sprinkle a thin layer of brown sugar on top of each custard. Use a kitchen torch to caramelize the sugar until it’s golden and crisp. Allow it to cool for a few minutes before serving.
