    Prepare the Plantains

    Peel the green plantains and cut them into 1-inch thick slices.

    Fry the Plantains

    Heat the vegetable oil in a large frying pan over medium heat. Fry the plantain slices for about 3-4 minutes on each side until they are golden yellow and slightly soft.

    Smash the Plantains

    Remove the plantains from the oil and drain them on paper towels. Using a flat surface, gently smash each piece to flatten it.

    Second Fry

    Return the smashed plantains to the hot oil and fry again for 2-3 minutes until they are crispy and golden brown. Drain on paper towels and sprinkle with salt.

    Make the Criolla Sauce

    In a bowl, combine the red onion, tomato, bell pepper, garlic, cilantro, lime juice, olive oil, salt, and black pepper. Mix well.

    Serve

    Serve the crispy tostones hot with the criolla sauce drizzled on top or on the side for dipping.
