    Prepare the Marinade

    In a bowl, mix olive oil, lemon juice, cumin, salt, and black pepper. Add the tilapia fillets, ensuring they are well coated. Let them marinate for at least 30 minutes.

    Cook the Rice

    In a saucepan, add 2 cups of water and bring to a boil. Add the rice, reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and water is absorbed.

    Sauté the Vegetables

    In a skillet, heat a tablespoon of olive oil over medium heat. Add sliced onion, red, and green bell peppers. Sauté until the vegetables are tender, about 5-7 minutes. Add minced garlic and cook for another minute.

    Grill the Tilapia

    Preheat the grill to medium-high heat. Grill the marinated tilapia fillets for about 4-5 minutes on each side or until the fish flakes easily with a fork.

    In a separate skillet, heat a tablespoon of olive oil over medium heat. Peel and slice the plantains diagonally. Fry the slices until golden brown on both sides, about 3 minutes per side.
