Prepare the Arepa Dough
In a large bowl, mix the corn flour, water, and salt until a smooth dough forms. Let it rest for about 5 minutes.

Shape the Arepas
Divide the dough into 4 equal portions and shape each into a round patty about 1/2 inch thick.

Cook the Arepas
Heat a skillet over medium heat and add a tablespoon of oil. Cook the arepas for about 5-7 minutes on each side until golden brown and cooked through.

Prepare the Blood Sausage
While the arepas are cooking, slice the blood sausage into rounds. In a separate pan, add the remaining oil and cook the blood sausage slices for about 3-4 minutes until heated through.

Assemble the Arepas
Once the arepas are cooked, slice them open (like a pocket) and stuff them with cheese and the cooked blood sausage slices.

Serve the arepas warm, optionally with avocado or salsa on the side.
