    Prepare the Seafood Marinara Sauce

    In a large skillet, heat olive oil over medium heat. Add minced garlic, diced onion, and red bell pepper. Sauté until the vegetables are tender, about 5 minutes.

    Add the diced tomatoes and cook for another 3 minutes. Stir in the coconut milk and bring to a simmer.

    Add the mixed seafood and cook until the seafood is cooked through, about 5-7 minutes. Season with salt, black pepper, and fresh cilantro. Remove from heat and set aside.

    Grill the Tilapia

    Preheat the grill to medium-high heat. Season the tilapia fillets with salt, black pepper, and lime juice.

    Grill the fillets for about 4-5 minutes on each side or until the fish flakes easily with a fork.

    In a saucepan, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and cook for about 15-20 minutes or until the rice is tender and water is absorbed. Fluff with a fork.

    In a frying pan, heat vegetable oil over medium heat. Fry the sliced plantains until golden brown on both sides, about 2-3 minutes per side. Drain on paper towels.
