Cooking Instructions

  1. 1

    Marinate the Pork

In a bowl, mix olive oil, minced garlic, lime juice, cumin, salt, and black pepper. Add the pork chops and marinate for at least 30 minutes.

  2. 2

    Cook the Rice

In a saucepan, combine 1 cup of rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat, cover, and simmer for about 18 minutes or until water is absorbed. Fluff with a fork before serving.

  3. 3

    Prepare the Black Beans

Heat the black beans in a small saucepan over medium heat until warmed through. Season with salt and pepper to taste.

  4. 4

    Fry the Plantains

Peel and slice the sweet plantains diagonally. In a skillet over medium heat, add a little oil and fry the plantain slices until golden brown on both sides. Remove and drain on paper towels.

  5. 5

    Grill the Pork Chops

Preheat the grill to medium-high heat. Grill the marinated pork chops for about 6-7 minutes per side, or until they reach an internal temperature of 145°F (63°C).

  6. 6

    Assemble the Salad

Chop the lettuce and tomato. Toss together in a bowl and season with olive oil, lime juice, salt, and pepper to taste.

  7. 7

    Serve

On a plate, serve the grilled pork chops alongside the rice, black beans, fried plantains, and salad.
