    Prepare the Fish

    Clean and scale the red tilapia. Pat dry with paper towels, then season with salt and black pepper.

    Bread the Fish

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with cornmeal. Dip each fish first in flour, then in egg, and finally coat with cornmeal.

    Fry the Fish

    In a large skillet, heat vegetable oil over medium-high heat. Fry each breaded tilapia for about 5-7 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

    Prepare the Cassava

    Peel the cassava and cut into thick slices. Boil in salted water for about 15 minutes or until tender. Drain and fry in hot oil until golden and crispy.

    Fry the Plantains

    Peel the sweet plantains and slice them diagonally. Fry in the same oil until golden and caramelized on both sides.

    Cook the Rice

    Rinse the rice under cold water. In a pot, combine rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce to low heat, cover, and cook for about 15 minutes or until water is absorbed.

    Prepare the Salad

    Chop lettuce, tomatoes, and onion. Toss together in a bowl and season with salt and pepper to taste.

    Plate the fried tilapia alongside the fried cassava, sweet plantains, rice, and salad. Enjoy your Mojarra Frita!
