    In a bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper. Marinate the salmon fillets in this mixture for at least 30 minutes.

    In a medium saucepan, bring vegetable broth to a boil. Add yellow rice, stir, cover, and reduce heat to low. Cook for about 20 minutes or until rice is tender and liquid is absorbed.
