    In a bowl, mix olive oil, minced garlic, lime juice, salt, and black pepper to create a marinade.

    Place the pork loin in the marinade, ensuring it is well-coated. Cover and refrigerate for at least 30 minutes.

    In a pot, cook the rice according to package instructions. Set aside when done.
