Prepare the Dough

    Make the Dough

    In a large mixing bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. In a separate bowl, whisk together the egg and water. Gradually add the wet ingredients to the flour mixture, stirring until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.

Prepare the Fillings

    Prepare Spinach and Cheese Filling

    In a skillet over medium heat, sauté the chopped spinach until wilted. Remove from heat and mix with ricotta and mozzarella cheese. Season with black pepper and garlic powder.

    Prepare Guava and Cheese Filling

    In a bowl, mix the guava paste with a bit of water to soften. Set aside.

    Prepare Hawaiana Filling

    In a bowl, combine diced pineapple and ham.

Assemble and Bake

    Form the Empanadas

    Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface to about 1/8 inch thick. Cut out circles using a 4-5 inch cookie cutter. Place a tablespoon of each filling in the center of the circles, fold over, and crimp the edges to seal.

    Bake the Empanadas

    Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with egg yolk for a golden finish. Bake for 25-30 minutes or until golden brown.
