Chorizo Preparation

    Prepare the Sausage Mixture

    In a large bowl, combine the ground pork, smoked paprika, minced garlic, cumin, oregano, salt, black pepper, red chili flakes, and white vinegar. Mix well until all ingredients are fully incorporated.

    Prepare the Casings

    Rinse the natural hog casings under cold water and soak them in water for at least 30 minutes to soften.

    Stuff the Sausage

    Using a sausage stuffer, carefully fill the prepared hog casings with the sausage mixture, being careful not to overstuff. Tie off the ends securely.

    Cook the Chorizo

    You can grill, fry, or bake the chorizo until they are browned and cooked through, about 20-25 minutes, ensuring they reach an internal temperature of 160°F (70°C).

    Serve

    Let the chorizo rest for a few minutes before slicing or serving whole. Enjoy your Colombian chorizo with arepas or in your favorite dish!
