Cooking Instructions

  1. 1

    Marinate the Steak

In a large bowl, combine olive oil, minced garlic, lime juice, cumin, chili powder, salt, and black pepper. Add the flank steak and coat well. Cover and marinate in the refrigerator for at least 1 hour.

  2. 2

    Cook the Rice

In a saucepan, combine 1 cup of rice with 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 15-20 minutes or until the rice is tender and water is absorbed.

  3. 3

    Heat the Beans

In a small pot, heat the canned black beans over medium heat until warmed through. Stir occasionally.

  4. 4

    Fry the Plantains

Peel and slice the sweet plantains diagonally. In a skillet, heat oil over medium heat and fry the plantain slices until golden brown on both sides. Remove and drain on paper towels.

  5. 5

    Grill the Steak

Preheat the grill to medium-high heat. Remove the steak from the marinade and grill for 6-8 minutes on each side, or until it reaches your desired level of doneness. Let rest for 5 minutes before slicing.

  6. 6

    Prepare the Salad

In a bowl, combine shredded lettuce, diced tomato, and diced onion. Toss lightly and set aside.

  7. 7

    Assemble the Plate

On a large plate, serve sliced grilled steak with rice, black beans, fried sweet plantains, and the salad on the side.
