Prepare the sauce
In a large skillet, heat olive oil over medium heat. Add the chopped onion, bell pepper, and minced garlic. Sauté until the vegetables are soft, about 5 minutes.

Add tomatoes and spices
Stir in the chopped tomato, salt, and black pepper. Cook for another 3 minutes until the tomatoes have softened.

Cook the shrimp
Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes.

Add coconut milk
Pour in the coconut milk and lime juice. Stir well and let it simmer for about 5 minutes until the sauce thickens slightly.

Remove from heat and stir in the chopped cilantro. Adjust seasoning with salt and pepper if needed.
