Cooking the Rice
In a medium saucepan, combine the white rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes or until the rice is cooked and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Preparing the Beans
While the rice is cooking, rinse the black beans if using canned, or soak and cook them if using dried. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the cooked black beans and simmer for about 5-10 minutes, seasoning with a little salt to taste.

Frying the Plantains
Peel the sweet plantains and slice them diagonally into 1-inch thick pieces. In another pan, heat the remaining tablespoon of olive oil over medium heat. Fry the plantain slices until they are golden brown on each side, about 3-4 minutes per side. Drain on paper towels.

Assembling the Bandejita
On a plate, serve a portion of the cooked rice, top it with the seasoned black beans, and arrange the fried sweet plantains on the side. Optionally, garnish with fresh herbs or avocado slices.
