Preparation Steps

    Prepare the Rice and Beans

    Cook the rice according to package instructions. In a separate pot, cook the black beans until tender. Season with salt and pepper.

    Cook the Sweet Plantain

    Peel and slice the sweet plantain diagonally. Heat olive oil in a pan over medium heat and fry the slices until golden brown on both sides. Remove and set aside.

    Make the Arepas

    In a bowl, mix the corn flour with water and a pinch of salt until dough forms. Shape into small discs and cook on a hot griddle for about 5 minutes on each side, or until golden and cooked through.

    Cook the Eggs

    In the same pan used for the plantains, crack the eggs and fry them to your desired doneness.

    Prepare the Salad

    In a bowl, toss the mixed salad greens with a drizzle of olive oil, salt, and pepper.

    On a plate, serve a portion of rice and beans, top with sliced avocado, sweet plantains, two eggs, and arepas. Serve alongside the salad.
