Preparation Steps

  1. 1

    Prepare the Rice and Beans

Cook the rice according to package instructions. For the black beans, heat them in a saucepan until warm, adding salt to taste.

  2. 2

    Cook the Meats

Season the flank steak with salt and pepper, then grill or pan-fry to your desired doneness. Cook the chorizo sausage on medium heat until browned and cooked through. Fry the pork belly until crispy.

  3. 3

    Fry the Plantains

Peel and slice the sweet plantains diagonally. Heat oil in a pan over medium heat and fry the plantain slices until golden brown and caramelized. Remove and drain on paper towels.

  4. 4

    Cook the Eggs

In a small pan, fry the eggs sunny-side up or to your preference.

  5. 5

    Make the Arepas

In a bowl, mix corn flour, salt, and water until a dough forms. Divide the dough into balls and flatten them into discs. Cook them on a hot griddle or skillet for about 5-7 minutes on each side, until golden brown.

  6. 6

    Assemble the Bandeja Montañera

On a large platter, arrange the cooked rice, beans, sliced avocado, fried egg, and meats (steak, chorizo, pork). Add the fried plantains and arepas on the side.
