    In a large mixing bowl, combine the pre-cooked cornmeal, salt, and water. Mix well until a soft dough forms. Let the mixture rest for about 5 minutes.

    Divide the dough into 6 equal portions and shape each portion into a round disk, about 1/2 inch thick.

    Cook the Arepas

    Heat a skillet or griddle over medium heat. Add a bit of oil and place the arepas on the skillet. Cook for about 5-7 minutes on each side or until they are golden brown and slightly crispy.

    Add the Filling

    Once the arepas are cooked, carefully slice them open without cutting all the way through. Stuff each arepa with a generous amount of cheese and chopped pork cracklings.

    Return the stuffed arepas to the skillet and cook for an additional 2-3 minutes on each side, until the cheese is melted and everything is heated through.
