Filling and Tostones
Method
Preparation
- 1
- 2
Mix the Filling
In a bowl, combine the cooked shrimp, lime juice, mayonnaise, chopped cilantro, salt, and black pepper. Mix well until all ingredients are incorporated.
- 3
Prepare the Avocados
Cut the avocados in half and remove the pit. Scoop out some of the flesh to create a larger cavity for the filling. You can mash the scooped-out flesh and mix it into the shrimp filling if desired.
- 4
Stuff the Avocados
Generously fill each avocado half with the shrimp mixture.
- 5
Make the Tostones
Peel the green plantains and cut them into 1-inch thick slices. Heat oil in a frying pan over medium heat. Fry the plantain slices until golden, about 2-3 minutes on each side. Remove and flatten each slice using a tostonera or a flat surface. Return to the hot oil and fry again until crispy. Drain on paper towels.
- 6
Serve
Serve the stuffed avocados alongside the crispy tostones.
