In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt, pepper, cumin, and chili powder. Add the chicken to the skillet and cook for 6-7 minutes on each side, or until cooked through and no longer pink in the center. Remove from heat and let it rest, then shred the chicken using two forks.

In a saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute, stirring constantly. Gradually whisk in the milk until smooth. Continue to cook, stirring frequently, until the mixture thickens, about 3-5 minutes. Reduce heat to low and add the Monterey Jack cheese, cream cheese, and diced jalapeño (if using). Stir until the cheeses are fully melted and the sauce is creamy.
