Cooking Quinoa

1. Rinse Quinoa

Rinse 1 cup of quinoa under cold water to remove any bitterness.

2. Cook Quinoa

In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add the rinsed quinoa, cover, and reduce the heat to a simmer. Cook for 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

Cooking Chicken

3. Prepare Chicken

While the quinoa is cooking, preheat a grill or skillet over medium-high heat. Rub 2 pieces of boneless chicken breast with 2 tablespoons of olive oil, and season with garlic powder, paprika, salt, and black pepper.

4. Cook Chicken

Grill or sear the seasoned chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.

5. Chop Vegetables

While the chicken is resting, chop 1 avocado, 1 cup of cherry tomatoes, 1 cucumber, and 1 small red onion. Set aside.

6. Prepare Cilantro and Lime

Chop 0.5 cups of fresh cilantro and cut 1 lime into wedges.

Assemble Bowl

7. Combine Ingredients

In a large bowl, fluff the cooked quinoa with a fork. Top with sliced chicken, avocado, cherry tomatoes, cucumber, red onion, and cilantro.

8. Serve
