Cooking Quinoa
1. Rinse Quinoa
Rinse 1 cup of quinoa under cold water to remove any bitterness.

In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add the rinsed quinoa, cover, and reduce the heat to a simmer. Cook for 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

While the quinoa is cooking, preheat a grill or skillet over medium-high heat. Rub 2 pieces of boneless chicken breast with 2 tablespoons of olive oil, and season with garlic powder, paprika, salt, and black pepper.

Grill or sear the seasoned chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.
