    Rinse the Rice

    Start by rinsing 1 cup of long-grain white rice under cold water until the water runs clear. This removes excess starch and helps achieve a smoother texture.

    Soak the Rice

    In a bowl, combine the rinsed rice with 4 cups of water and add 2 cinnamon sticks. Allow the mixture to soak for at least 4 hours or overnight for best results.

    Blend the Mixture

    Once the rice has soaked, transfer the rice, water, and cinnamon sticks to a blender. Blend on high until the rice is finely ground, about 1-2 minutes.

    Strain the Mixture

    Using a fine mesh sieve or cheesecloth, strain the blended mixture into a large bowl or pitcher to separate the rice solids from the liquid. Press down on the solids to extract as much liquid as possible.

    Sweeten the Horchata

    To the strained liquid, add 1 cup of sugar, 1 tsp of vanilla extract, and a pinch of salt. Stir until the sugar is fully dissolved.

    Add Milk

    Finally, stir in 2 cups of milk (or non-dairy milk) to the sweetened rice water. Mix well until fully combined.

    Chill and Serve

    Refrigerate the horchata for at least 2 hours to chill. Serve over ice and enjoy!
