Marinade

Method

Preparation

  1. 1

    Make the Marinade

In a large mixing bowl, combine olive oil, minced garlic, fresh lemon juice, dried oregano, paprika, salt, and black pepper. Whisk together until well combined.

  2. 2

    Marinate the Chicken

Add the chicken thighs to the marinade. Ensure each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour or overnight for best results.

Grilling

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat, around 400°F (200°C). If using charcoal, ensure the coals are hot and covered with ash.

  2. 4

    Grill the Chicken

Remove the chicken thighs from the marinade and discard any leftover marinade. Place the chicken skin-side down on the grill. Grill for about 7-8 minutes, then flip and grill for another 7-8 minutes, or until the internal temperature reaches 165°F (75°C).

  3. 5

    Rest and Serve

Once the chicken is cooked, remove it from the grill and let it rest for 5 minutes before serving. This helps to keep the chicken juicy.
