Preparing the Salad

    Wash and Prepare Greens

    Thoroughly wash the mixed greens under cold water. Spin dry or pat dry with a paper towel. Place the washed greens in a large salad bowl.

    Slice the Avocado

    Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Slice the avocado into thin pieces and set aside.

Preparing the Citrus

    Segment the Orange and Grapefruit

    Cut off the top and bottom of the orange and grapefruit. Carefully slice off the peel and pith, then segment the fruit by cutting between the membranes to release the segments. Collect the segments in a bowl.

    Juice the Lemon

    Cut the lemon in half and squeeze out the juice into a small bowl, removing any seeds.

Making the Dressing

    Combine Dressing Ingredients

    In a small bowl, whisk together the olive oil, honey, Dijon mustard, lemon juice, salt, and black pepper until well combined and emulsified.

Assembling the Salad

    Toss the Salad

    Add the avocado slices and citrus segments to the bowl with the mixed greens. Drizzle the dressing over the top and gently toss to combine all ingredients without mashing the avocado.
