Prepare the Chicken Tinga Filling

    Cook the Chicken

    In a large pot, add 2 cups of chicken breasts and cover with water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until the chicken is cooked through. Remove the chicken and let it cool, then shred it using two forks.

    In the same pot, heat 2 tablespoons of olive oil over medium heat. Add 1 cup of chopped onion and sauté for 5 minutes until translucent. Then, add 3 teaspoons of minced garlic and sauté for another minute until fragrant.

    Stir in 2 tablespoons of chipotle peppers in adobo sauce, 1 cup of diced tomatoes, 1 cup of chicken broth, 1 teaspoon of cumin, 1 teaspoon of salt, and 1 teaspoon of black pepper. Bring the mixture to a simmer.

    Add the shredded chicken back into the pot and stir to combine. Let it simmer for 10-15 minutes, allowing the flavors to meld together.

Assemble the Burritos

    Warm 4 large flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.

    On each tortilla, spoon a generous amount of the chicken tinga filling, followed by ½ cup of shredded cheese, a dollop of sour cream, and a sprinkle of fresh cilantro.
