For the Tacos

Method

Prepare the Chicken Marinade

  1. 1

    Mix the Marinade

In a large bowl, combine olive oil, lime juice, minced garlic, ground cumin, paprika, chili powder, salt, and black pepper. Whisk until well-blended.

  2. 2

    Marinate the Chicken

Add the boneless, skinless chicken thighs to the marinade, ensuring each piece is thoroughly coated. Cover the bowl and refrigerate for at least 1 hour, or overnight for best results.

Grill the Chicken

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

  2. 4

    Grill the Chicken

Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

  3. 5

    Rest the Chicken

Once cooked, transfer the chicken to a cutting board and let it rest for 5 minutes before slicing.

Assemble the Tacos

  1. 6

    Warm the Tortillas

In a dry skillet or on the grill, warm the corn tortillas for about 30 seconds on each side until pliable.

  2. 7

    Slice the Chicken

Slice the grilled chicken into thin strips.

  3. 8

    Build the Tacos

On each warmed tortilla, add a few slices of grilled chicken, followed by chopped cilantro, diced red onion, and slices of avocado.

  4. 9

    Add Toppings

Top each taco with a dollop of sour cream and serve with lime wedges on the side.
