Preparation
- 1
Cook the Rice
In a medium pot, combine the white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and water is absorbed.
- 2
Cook the Ground Beef
In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat.
- 3
Season the Beef
Add taco seasoning to the browned beef. Stir well to combine, then add a splash of water and let simmer for another 5 minutes.
- 4
Heat the Tortillas
In a separate skillet or on a grill, warm the flour tortillas on medium heat for about 30 seconds on each side until pliable.
Assembly
- 5
Layer the Ingredients
On each tortilla, layer 1/4 of the cooked rice, 1/4 of the seasoned ground beef, 1/4 of the black beans (drained and rinsed), followed by shredded lettuce, diced tomatoes, shredded cheese, sour cream, and salsa.
- 6
Wrap the Burrito
Fold in the sides of the tortilla and then roll it tightly from the bottom up to enclose the filling.
- 7
Serve
Cut the burrito in half if desired and serve immediately with additional salsa or toppings on the side.
