Prepare the Chile Sauce
Remove the stems and seeds from the guajillo and ancho chiles. Toast them in a dry skillet over medium heat until fragrant, about 2-3 minutes. Soak the toasted chiles in hot water for 15 minutes until softened.

Blend the Sauces
In a blender, combine the soaked chiles, garlic cloves, onion, and 1 cup of the cooking liquid from the pot. Blend until smooth.

Combine and Cook
Add the blended chile sauce back to the pot with the meat. Cover and let simmer for 2-3 hours until the meat is tender.
Assembling the Tacos

Prepare the Tortillas
In a skillet, heat cooking oil over medium heat. Lightly fry the corn tortillas for about 30 seconds on each side until warm and pliable.

Fill the Tacos
Remove the meat from the pot and shred it with two forks. Fill each tortilla with shredded meat, chopped onion, cilantro, and shredded cheese.

Crunch the Tacos
In the same skillet, add a bit more oil if needed, and place the filled tacos seam side down. Fry until crispy, about 2-3 minutes per side.

Serve the crispy tacos with lime wedges on the side for squeezing.
