    Prepare the Dough

    In a large bowl, mix the flour, baking powder, and salt. Gradually add warm water and knead until the dough is smooth and elastic. Cover with a clean towel and let it rest for 30 minutes.

    Roll and Cut the Dough

    After resting, roll out the dough on a floured surface to about 1/8 inch thick. Cut into squares or triangles, approximately 3 inches wide.

    Heat the Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until hot (approximately 350°F or 175°C).

    Fry the Sopapillas

    Carefully drop the cut dough pieces into the hot oil. Fry until they puff up and turn golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

    Coat with Cinnamon Sugar

    While still warm, sprinkle the sopapillas with cinnamon sugar.
