Prepare the Chicken
Preheat the grill to medium-high heat. In a mixing bowl, combine olive oil, salt, black pepper, garlic powder, and onion powder. Brush the mixture over the chicken breasts.
Grill the Chicken
Place the chicken breasts on the grill and cook for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
Add Bacon and Cheese
In the last few minutes of grilling, place two slices of bacon on each chicken breast and top with cheddar cheese. Close the grill lid to melt the cheese.
Cook the Rice and Beans
While the chicken is grilling, cook the rice according to package instructions. Heat the black beans in a small saucepan over low heat until warmed through.
Prepare the Accompaniments
Chop the lettuce and slice the tomatoes. Prepare the guacamole if not using store-bought.
Serve
Once the chicken is done, serve each breast with rice, black beans, lettuce, guacamole, sliced tomatoes, and warm flour tortillas on the side.
