Prepare the Seafood
In a mixing bowl, combine shrimp, scallops, crab meat, and fish fillets. Add minced garlic, lime juice, salt, and pepper. Toss to coat evenly and let marinate for about 15 minutes.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add sliced onion and bell pepper, cooking until they are softened, about 5-7 minutes.

Cook the Seafood
Add the marinated seafood mixture to the skillet with the vegetables. Cook for about 5-7 minutes, or until the seafood is cooked through and opaque.

Melt the Cheese
Sprinkle the shredded cheese over the seafood mixture in the skillet. Cover and cook for an additional 2-3 minutes until the cheese is melted.

Serve
Carefully transfer the seafood and cheese mixture to a preheated molcajete or stone dish. Serve with warm flour tortillas and a side of Mexican salad.
