    Prepare the Enchiladas

    Preheat the oven to 350°F (175°C). In a skillet, heat a small amount of oil over medium heat. Soften each corn tortilla in the skillet for about 15 seconds per side, then remove and let cool slightly.

    Assemble the Enchiladas

    Place a portion of shredded chicken in the center of each tortilla, roll them up, and place seam-side down in a baking dish. Repeat until all tortillas are filled.

    Add Sauce and Cheese

    Pour the enchilada sauce evenly over the rolled tortillas and sprinkle with shredded cheese.

    Bake

    Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.

    Prepare Rice and Beans

    While the enchiladas are baking, prepare rice and beans according to package instructions or your preferred method.

    Once enchiladas are done, remove from the oven. Serve two enchiladas on each plate, topped with shredded lettuce, diced tomatoes, and a dollop of sour cream alongside a serving of rice and beans.
