Prepare the Filling
In a skillet, heat olive oil over medium heat. Add diced onion and red bell pepper. Sauté until softened, about 5 minutes. Add minced garlic and cook for an additional minute. Stir in black beans, corn, cilantro, salt, and black pepper. Mix well and cook for another 2-3 minutes. Remove from heat.

Assemble the Enchiladas
Preheat the oven to 375°F (190°C). Spread a little enchilada sauce on the bottom of a baking dish. Take a corn tortilla, fill it with the bean mixture, and roll it up tightly. Place seam-side down in the baking dish. Repeat with remaining tortillas and filling.

Top with Sauce and Cheese
Once all the enchiladas are in the baking dish, pour the remaining enchilada sauce evenly over the top. Sprinkle shredded cheese generously over the sauce. If desired, add sliced jalapeños on top.

Serve
Remove from the oven and let cool for a few minutes before serving. Garnish with extra cilantro if desired.
