Enchiladas

Method

Preparation

  1. 1

    Prepare the Filling

In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent. Stir in shredded chicken, refried beans, ground cumin, salt, and black pepper. Cook for about 5 minutes until heated through.

  2. 2

    Assemble the Enchiladas

Preheat your oven to 350°F (175°C). Take a corn tortilla, spoon some filling into the center, and roll it up. Place the rolled enchilada seam-side down in a greased baking dish. Repeat with all tortillas.

  3. 3

    Add Sauce and Cheese

Pour the enchilada sauce evenly over the rolled enchiladas. Sprinkle shredded cheddar cheese on top.

  4. 4

    Bake

Cover the baking dish with foil and bake for 20 minutes. Then remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

  5. 5

    Serve

Remove from the oven and let cool for a few minutes. Top with shredded lettuce, chopped tomatoes, and a dollop of sour cream before serving.
